I recently read an article about summer meals while camping. I have to say that I was surprized by the suggested meals. While they sounded tasty I was caught off guard by their elaborate nature. While I am by no means a foodie I couldn’t get my head around Creamy Polenta or Orzo being on the camping menu. I also recognize that some camping trips involve trailers with significant square footage, more televisions and creature comforts than I have in my home.
While these dishes sound tasty I think I’ll stick to my trusty campfire pizzas, corn on the cob roasted in tin foil, and the ever classic smoky or burger options. I love fresh salads to enjoy all of the summer fruits and fresh herbs that I can get my hands on! Is there anything better than a perfect wedge of watermelon on a hot day?! Am I missing something though? Let me know if my not-so-gourmet camping meals need to be upgraded. Perhaps I need some campfire couscous or risotto to enhance my standbys.
Every summer my sister in law and I go away and beforehand we dream up our perfect trip menu. Every summer we agree, after the fact, that it could be further simplified and that our classics are satisfactory. Throw in a few servings of ice cream and some s’mores and we’re pleased to soak up our summer together making great memories.
